A Minas Gerais native, Thiago Dias grew up with coffee in his veins – but it was in a Welsh farmhouse during Christmas 2023 that Why So Coffee was born. Over steaming cups, a lighthearted chat about the Brazilian phrase "Uai Sô" sparked a brand blending Minas’ soul with global curiosity. By March 2025, Thiago returned to Brazil with a bolder vision. Partnering with André Chavari (production expert) and Logan Ramos (field agronomist), he pivoted from the small-scale Why So Coffee to launch A.L.T Origens Coffee – now dedicated to exporting specialty coffees from Minas Gerais to the UK, with full traceability and ethical impact. André Chavari

Creator of Café Convicto and a reference point in the coffee industry, André de Lima Chavari dedicates his life to transforming the relationship between producers, consumers, and coffee. A native of Andradas, Minas Gerais, he began his journey in coffee at the age of 17 in a local café, where he discovered his true passion for the beverage. Throughout his career, built in various companies within the industry, André has acquired extensive experience in all stages of the process, from the farm to the cup. His mission goes beyond offering high-quality coffees; he works to connect small producers to the market, helping them recognise the true value of their beans and promoting better conditions for their families. Has been a close friend of Thiago’s since 2000—and today, he’s also his indispensable link to Brazil’s coffee farms. As an agronomist (graduated 2017, active since 2014), Logan combines his passion for agriculture, nature, and coffee with hands-on expertise in farm management. Based in Southern Minas Gerais, he works directly with producers, building trust and refining practices to maximize yields and quality. While Thiago oversees operations abroad, Logan ensures everything runs seamlessly on the ground, merging local knowledge with global goals.
